Moldovan-style thick sausages

Thick sausages made to a Moldovan recipe, grilled over wood charcoal. They're seasoned generously, with garlic and pepper, the way it's done in that region. Over the coals they brown up and drip their fat into the fire, not onto the plate. Served with polenta, it's a Sunday kind of meal.
