Smoked roasted pork knuckle

Pork knuckle, roasted until the meat falls off the bone. A knuckle isn't quick to cook, it takes hours for the skin to crisp up and the meat to go tender. We serve it with a browned crust on top and meat that pulls away on its own off the fork. A serious portion, meant for sharing. Or not.
