Grilled chicken

Whole chicken, nearly a kilogram, butterflied and left on the charcoal until the skin turns glossy and crisp. In the oven, chicken comes out pale and soft. Over wood charcoal it's a different story: crackling skin, meat that pulls right off the bone, real smoke in every piece. It's the dish people come back to Gastrojar for. Served with polenta and garlic sauce on the side.
